- 1 cup unsalted butter, softened
- 1 cup granulated sugar

- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda

- 1 cup chopped apples or applesauce
- 1/4 cup granulated sugar (for coating)
- 1 tablespoon ground cinnamon
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together butter and sugar until fluffy.
- Add egg and vanilla, mix well.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add dry ingredients to wet mixture, then fold in chopped apples.
- In a small bowl, combine sugar and cinnamon for coating.
- Roll dough into 1-inch balls, then roll in cinnamon sugar mixture.
- Place on prepared baking sheets and flatten slightly.
- Bake for 10-12 minutes until edges are golden brown.
- Cool on wire racks before serving.
Notes
- You can use unsweetened applesauce as a substitute for chopped apples.
- For softer cookies, slightly underbake and let cool.
