  • 8 oz cream cheese, softened
  • 1 cup fresh blueberries
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In a separate bowl, beat eggs, milk, melted butter, and vanilla.
  4. Gradually add wet ingredients into dry, mixing until just combined.
  5. In a small bowl, mix softened cream cheese with a tablespoon of sugar until smooth.
  6. Gently fold blueberries into the batter.
  7. Pour half the batter into the prepared loaf pan.
  8. Spread cream cheese mixture over the batter, then top with remaining batter.
  9. Swirl gently with a knife to create marbling.
  10. Bake for 50-60 minutes until golden brown and a toothpick inserted in the center comes out clean.
