Ingredients

  • 1 pound Italian sausage, sliced
  • 1 package (9 oz) cheese tortellini
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, cook sausage over medium heat until browned. Remove and set aside.
  2. In the same pot, sauté onion, carrots, and celery until tender.
  3. Add garlic and cook for another minute.
  4. Pour in chicken broth and diced tomatoes, bring to a simmer.
  5. Return sausage to the pot, season with basil, salt, and pepper.
  6. Add tortellini and cook until tender, about 3-5 minutes.
  7. Serve hot, garnished with fresh parsley.
