- 1 pound Italian sausage, sliced
- 1 package (9 oz) cheese tortellini
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 (14.5 oz) can diced tomatoes
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, cook sausage over medium heat until browned. Remove and set aside.
- In the same pot, sauté onion, carrots, and celery until tender.
- Add garlic and cook for another minute.
- Pour in chicken broth and diced tomatoes, bring to a simmer.
- Return sausage to the pot, season with basil, salt, and pepper.
- Add tortellini and cook until tender, about 3-5 minutes.
- Serve hot, garnished with fresh parsley.
