Instructions
- Heat olive oil in a large pot over medium heat.
- Add sausage and cook until browned, breaking apart if necessary.
- Stir in onion, garlic, carrots, and celery; cook until vegetables are softened.
- Pour in chicken broth, add thyme, salt, and pepper; bring to a boil.
- Reduce heat and add tortellini; cook according to package instructions.
- Stir in spinach and cook until wilted.
- Serve hot, garnished with fresh herbs if desired.
Notes
Feel free to add other fall vegetables like squash or pumpkin for extra seasonal flavor. Use vegetarian sausage for a vegetarian option.
