- 1 lb cooked turkey, chopped
- 2 cups stuffing mix
- 1/2 cup dried cranberries
- 1/4 cup chopped fresh herbs (parsley, sage, thyme)
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 1/4 cup breadcrumbs
- Salt and pepper to taste
- Olive oil for frying
Instructions
- In a large bowl, combine cooked turkey, stuffing mix, cranberries, herbs, Parmesan, egg, breadcrumbs, salt, and pepper.
- Mix until well combined, then form into 1.5-inch balls.
- Heat olive oil in a skillet over medium heat.
- Fry the balls until golden brown and crispy, about 4-5 minutes per side.
- Drain on paper towels and serve warm with cranberry sauce.
Notes
Make sure not to overmix the ingredients to keep the balls tender. Can be prepared ahead and refrigerated before frying.
