  • 1 lb cooked turkey, chopped
  • 2 cups stuffing mix
  • 1/2 cup dried cranberries
  • 1/4 cup chopped fresh herbs (parsley, sage, thyme)
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 cup breadcrumbs
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. In a large bowl, combine cooked turkey, stuffing mix, cranberries, herbs, Parmesan, egg, breadcrumbs, salt, and pepper.
  2. Mix until well combined, then form into 1.5-inch balls.
  3. Heat olive oil in a skillet over medium heat.
  4. Fry the balls until golden brown and crispy, about 4-5 minutes per side.
  5. Drain on paper towels and serve warm with cranberry sauce.

Notes
