- 6 slices bacon, chopped
- 1 medium onion, diced
- 3 garlic cloves, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 pound potato gnocchi
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a large pot, cook bacon over medium heat until crispy. Remove and set aside.
- In the same pot, sauté onion and garlic until translucent.
- Add chicken broth and bring to a boil. Stir in gnocchi and cook until tender, about 3-4 minutes.
- Lower heat and stir in heavy cream and cheddar cheese until melted and smooth.
- Add cooked bacon, season with salt and pepper, and serve hot, garnished with parsley.
Notes
- For a thicker soup, simmer uncovered for an additional 5 minutes.
- You can substitute turkey bacon for a leaner option.
