- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into chunks
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 celery stalks, sliced
- 1 teaspoon smoked paprika
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon cayenne pepper
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley and sliced green onions for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chicken chunks and cook until browned; remove and set aside.
- In the same pot, add onions, garlic, bell pepper, and celery; sauté until vegetables are tender.
- Stir in smoked paprika, Cajun seasoning, cayenne pepper; cook for 1 minute.
- Pour in chicken broth, bring to a boil.
- Reduce heat and add cooked chicken back to the pot.
- Stir in heavy cream, simmer for 10 minutes to meld flavors.
- Season with salt and pepper, garnish with fresh parsley and green onions before serving.
Notes
- You can substitute heavy cream with coconut milk for a dairy-free version.
- Adjust spice levels by increasing or decreasing the cayenne pepper.
