- 4 large potatoes, peeled and cubed
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped chives
- 2 tablespoons butter
- Salt and pepper to taste
- 1 cup breadcrumbs
- 2 eggs, beaten
Instructions
- Preheat oven to 400°F (200°C). Boil potatoes until tender, then mash with butter, sour cream, cheese, salt, and pepper.
- Allow mashed mixture to cool slightly, then shape into small balls or puffs.
- Dip each puff into beaten eggs, then roll in breadcrumbs.
- Place on a baking sheet lined with parchment paper and bake for 20-25 minutes until golden brown.
Notes
You can add cooked bacon bits or chopped jalapenos for extra flavor. Serve warm with a dollop of sour cream or your favorite dipping sauce.
