  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream

Instructions

  1. Preheat oven to 325°F (160°C). Line a muffin tin with paper liners.
  2. Combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of each liner.
  3. In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and sour cream. Mix until well combined.
  4. Pour filling over the crusts, about 2/3 full. Bake for 20-25 minutes until set.
  5. Allow to cool completely, then refrigerate for at least 2 hours before serving.
