- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
Instructions
- Preheat oven to 325°F (160°C). Line a muffin tin with paper liners.
- Combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of each liner.
- In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and sour cream. Mix until well combined.
- Pour filling over the crusts, about 2/3 full. Bake for 20-25 minutes until set.
- Allow to cool completely, then refrigerate for at least 2 hours before serving.
Notes
- Use room temperature cream cheese for a smooth filling.
- Chill cheesecakes thoroughly for best texture.
