- 2 cups sweet corn kernels
- 8 oz cream cheese, softened
- 1/2 cup mayonnaise
- 1 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and pepper to taste
- Additional shredded cheese for topping
Instructions
- Preheat oven to 375°F (190°C).
- In a mixing bowl, combine cream cheese, mayonnaise, garlic powder, smoked paprika, salt, and pepper until smooth.
- Add corn kernels, chopped green onions, and half of the shredded cheese; mix well.
- Transfer the mixture to a baking dish, top with remaining shredded cheese.
- Bake for 20-25 minutes until bubbly and golden on top.
- Garnish with extra green onions before serving with chips or veggies.
Notes
For extra flavor, add diced jalapenos or cooked bacon. Serve hot or cold as a delicious appetizer.
