- 1 pound Italian sausage
- 1 package (16 oz) potato gnocchi
- 4 cups chicken broth
- 1 cup heavy cream
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 cups fresh spinach, chopped
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese for garnish
Instructions
- In a large pot, cook Italian sausage over medium heat until browned. Remove and set aside.
- Sauté onion and garlic in the same pot until fragrant and translucent.
- Add chicken broth, Italian seasoning, salt, and pepper. Bring to a simmer.
- Stir in gnocchi and cook until tender, about 3-4 minutes.
- Return sausage to the pot, then stir in heavy cream and spinach. Cook until spinach wilts and soup is heated through.
- Serve hot, topped with grated Parmesan cheese.
Notes
- Adjust seasoning with more salt and pepper as needed.
- You can substitute spinach with kale or arugula for variations.
- For a spicier kick, add red pepper flakes.
