- 1 lb Italian sausage (casings removed)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cups fresh spinach, chopped
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, cook the Italian sausage over medium heat until browned. Remove and set aside.
- In the same pot, sauté onion and garlic until fragrant and translucent.
- Return the sausage to the pot, add Italian seasoning, salt, and pepper, and stir.
- Pour in chicken broth, bring to a simmer, and cook for 10 minutes.
- Add heavy cream and Parmesan cheese, stir until cheese melts and soup thickens.
- Stir in spinach and cook until wilted, about 2 minutes.
- Serve hot with extra Parmesan and bread if desired.
Notes
- For a spicier version, add red pepper flakes.
- Use fresh Parmesan for the best flavor.
- Can be made ahead and reheated.
