Ingredients

  • 1 lb Italian sausage (casings removed)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the Italian sausage over medium heat until browned. Remove and set aside.
  2. In the same pot, sauté onion and garlic until fragrant and translucent.
  3. Return the sausage to the pot, add Italian seasoning, salt, and pepper, and stir.
  4. Pour in chicken broth, bring to a simmer, and cook for 10 minutes.
  5. Add heavy cream and Parmesan cheese, stir until cheese melts and soup thickens.
  6. Stir in spinach and cook until wilted, about 2 minutes.
  7. Serve hot with extra Parmesan and bread if desired.
