- 1 pound store-bought gnocchi
- 1 cup basil pesto
- 2 cups fresh spinach leaves
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C). Grease a baking dish.
- Cook gnocchi according to package instructions, then drain and set aside.
- In a large bowl, toss cooked gnocchi with basil pesto, olive oil, salt, and pepper.
- Spread the gnocchi mixture evenly in the prepared baking dish.
- Layer fresh spinach leaves over the gnocchi.
- Sprinkle shredded mozzarella and grated Parmesan on top.
- Bake in the preheated oven for 20-25 minutes until cheese is bubbly and golden.
- Garnish with additional Parmesan or basil if desired. Serve hot.
