  • 4 large bell peppers
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh basil
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds and membranes.
  3. In a bowl, combine ricotta, mozzarella, garlic, basil, salt, and pepper.
  4. Stuff the peppers with the cheese mixture and place in a baking dish.
  5. Drizzle with olive oil and bake for 25-30 minutes until peppers are tender and cheese is golden.

Notes

For a vegetarian option, omit the mozzarella or substitute with a vegan cheese. Serve warm garnished with extra basil.
