- 1 pound cooked chicken breast, shredded
- 1 (9-ounce) package tortellini (cheese or spinach)
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cups fresh spinach leaves
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Add chicken, chicken broth, garlic, Italian seasoning, salt, and pepper into the crockpot. Cover and cook on low for 3 hours.
- Stir in heavy cream, Parmesan, and spinach. Add tortellini and gently stir to combine.
- Cook on high for another 30 minutes or until pasta is tender and sauce thickens.
- Serve hot, garnished with extra Parmesan and fresh herbs if desired.
Notes
- You can use cooked rotisserie chicken for quick prep.
- Adjust cooking time for al dente tortellini if needed.
- For a spicier version, add red pepper flakes.
