Crispy and cheesy corn bites that are golden on the outside and gooey inside, ideal for any snack attack or party platter.

Ingredients

  • 1 cup sweet corn kernels
  • 1 cup shredded mozzarella cheese
  • 1/4 cup all-purpose flour
  • 1 large egg
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika (optional)
  • 2 tablespoons chopped fresh parsley or basil
  • Oil for frying

Instructions

  1. In a mixing bowl, combine corn, cheese, flour, egg, salt, pepper, paprika, and herbs until well mixed.
  2. Heat oil in a deep frying pan over medium heat.
  3. Drop spoonfuls of the mixture into hot oil, frying in batches.
  4. Cook until golden brown on all sides, about 2-3 minutes per batch.
  5. Remove with a slotted spoon and drain on paper towels.
  6. Serve hot with dipping sauces.

Notes

  • You can add chopped jalapenos for extra spice.
  • For a baked version, shape into small rounds and bake at 375°F (190°C) for 15-20 minutes.
