- 1 cup sweet corn kernels
- 1 cup shredded mozzarella cheese
- 1/4 cup all-purpose flour
- 1 large egg
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon paprika (optional)
- 2 tablespoons chopped fresh parsley or basil
- Oil for frying
Instructions
- In a mixing bowl, combine corn, cheese, flour, egg, salt, pepper, paprika, and herbs until well mixed.
- Heat oil in a deep frying pan over medium heat.
- Drop spoonfuls of the mixture into hot oil, frying in batches.
- Cook until golden brown on all sides, about 2-3 minutes per batch.
- Remove with a slotted spoon and drain on paper towels.
- Serve hot with dipping sauces.
Notes
- You can add chopped jalapenos for extra spice.
- For a baked version, shape into small rounds and bake at 375°F (190°C) for 15-20 minutes.
