- 2 cups grated carrots
- 1 1/2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup vegetable oil
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup chopped walnuts
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter
- 2 cups powdered sugar
Instructions
- Preheat oven to 350°F (175°C). Grease and line a 9×13 inch baking pan.
- In a large bowl, whisk together eggs, sugar, oil, and vanilla until smooth.
- Stir in grated carrots, flour, baking powder, baking soda, salt, and cinnamon until combined.
- Fold in chopped walnuts.
- Pour batter into prepared pan and bake for 30-35 minutes, until a toothpick inserted comes out clean.
- Let cool completely in the pan before frosting.
- In a mixing bowl, beat softened cream cheese and butter until creamy, then add powdered sugar and mix until smooth.
- Spread frosting over cooled bars, and sprinkle with additional walnuts if desired.
Notes
- For extra flavor, add a teaspoon of grated ginger or nutmeg to the batter.
- Chill the bars for at least 1 hour before slicing for cleaner cuts.
