- 1 loaf (16 oz) brioche or challah bread, cubed
- 2 cups fresh blueberries
- 4 large eggs
- 2 cups whole milk or heavy cream
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- Powdered sugar, for dusting
- Syrup and fresh mint, for serving
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- Spread cubed bread evenly in the dish. Sprinkle blueberries over the bread.
- In a mixing bowl, whisk together eggs, milk, sugar, vanilla, and cinnamon until well combined.
- Pour the custard mixture evenly over the bread and blueberries, pressing down gently.
- Cover with plastic wrap and refrigerate for at least 2 hours or overnight.
- Bake uncovered for 45-50 minutes until puffed and golden brown.
- Let cool slightly, dust with powdered sugar, and serve with syrup and mint leaves.
Notes
- Use day-old bread for best absorption. You can substitute blueberries with raspberries or strawberries.
- For a creamier texture, use heavy cream instead of milk.
