Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 2 Granny Smith apples, sliced
  • 1/2 cup caramel sauce, plus extra for drizzling

Instructions

  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press into the bottom of a greased 9-inch square baking pan. Bake for 10 minutes.
  2. In a large mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and sour cream. Pour over baked crust.
  3. Arrange apple slices on top of the cheesecake mixture and bake for 40–45 minutes, until set.
  4. Allow to cool, then refrigerate for at least 2 hours. Drizzle with caramel sauce before serving and garnish with extra apple slices and caramel.
