- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups cooked shredded chicken
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Saute onion and garlic until translucent.
- Add shredded chicken and cook for 2 minutes.
- Pour in chicken broth and bring to a boil.
- Lower heat and stir in heavy cream, thyme, salt, and pepper.
- Simmer for 10 minutes, stirring occasionally.
- Garnish with fresh parsley before serving.
Notes
You can substitute heavy cream with coconut milk for a dairy-free version. Adjust seasoning as needed.
