Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper and spritz with olive oil spray.
- In a saucepan, combine water, butter, and vanilla; bring to a boil.
- Add flour all at once, stirring vigorously until a dough forms and pulls away from sides of the pan.
- Transfer dough to a mixing bowl and let cool for 5 minutes.
- Beat in eggs one at a time until smooth and glossy.
- Spoon dough into a piping bag fitted with a large star tip.
- Pipe small bite-sized pieces onto the prepared baking sheet.
- Bake for 15-20 minutes until golden and crispy.
- In a small bowl, combine sugar and cinnamon. Toss baked bites in the cinnamon sugar mixture while still warm.
- Serve warm with chocolate sauce or caramel for dipping.
Notes
- Ensure the dough is cool enough before adding eggs to prevent curdling.
- For extra flavor, add a pinch of nutmeg or cardamom to the cinnamon sugar mixture.
