- 2 lbs boneless, skinless chicken breasts
- 1 package (9 oz) cheese tortellini
- 3 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Place chicken breasts in the slow cooker and season with salt, pepper, and Italian seasoning.
- Add chicken broth and cooked on low for 6 hours or until chicken is tender.
- Remove chicken, shred it with two forks, and return to the slow cooker.
- Add tortellini, heavy cream, Parmesan, and garlic; cook on high for 20-30 minutes until pasta is tender.
- Stir to combine and garnish with fresh herbs before serving.
Notes
- You can use cooked chicken if preferred; add it in step 3.
- For a healthier version, substitute heavy cream with Greek yogurt or coconut milk.
