- 4 salmon fillets
- 2 ripe mangoes, diced
- 1 red bell pepper, diced
- 1 small red onion, finely chopped
- 1/4 cup chopped cilantro
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Season salmon fillets with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear salmon skin-side down for 2-3 minutes, then flip and cook for another 2 minutes.
- Transfer salmon to a baking dish and bake for 8-10 minutes or until cooked through.
- While the salmon bakes, prepare the mango salsa by combining diced mango, red bell pepper, red onion, cilantro, lime juice, salt, and pepper in a bowl.
- Serve the baked salmon topped with fresh mango salsa. Garnish with extra cilantro if desired.
Notes
For added flavor, marinate the salmon briefly with lime juice and herbs before cooking. Use fresh, ripe mangoes for the best salsa flavor.
