- 2 lbs beef stew meat, cut into bites

- 1 pound potatoes, cut into chunks

Instructions
- Place beef bites in the crockpot, season with salt, pepper, thyme, and paprika.
- In a small bowl, mix melted butter and minced garlic, then pour over beef.
- Add potatoes to the crockpot, drizzle with olive oil, and toss to coat.
- Cover and cook on low for 6-8 hours or high for 4 hours, until beef is tender and potatoes are crispy.
- Garnish with chopped parsley before serving.
