- 4 boneless, skinless chicken breasts
- 2 pounds baby potatoes, halved
- 3 cloves garlic, minced

- 1/4 cup fresh parsley, chopped

- 2 tablespoons olive oil
Instructions
- Place chicken breasts in the slow cooker.
- Add minced garlic, Italian seasoning, salt, and pepper over the chicken.
- In a bowl, toss potatoes with olive oil, salt, and pepper; add to the slow cooker around the chicken.
- Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is tender and potatoes are roasted.
- Sprinkle parmesan cheese and parsley over the dish before serving.

- Perfect served with a side of steamed vegetables or a simple salad.
- For extra flavor, add a squeeze of lemon or a dash of red pepper flakes.
