- 4 large carrots, peeled and chopped
- 2 tablespoons olive oil
- 1 teaspoon honey or maple syrup
- 1 teaspoon lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Steam or roast the carrots until tender.
- In a bowl, mash the carrots with a fork or potato masher until desired consistency is achieved.
- Mix in olive oil, honey or maple syrup, lemon juice, salt, and pepper.
- Garnish with fresh parsley and serve warm or chilled.
Notes
Adjust the sweetness by adding more honey or syrup. For a creamier texture, blend the carrots after mashing. Best enjoyed fresh.
