  • 20 large jumbo pasta shells
  • 2 cups ricotta cheese
  • 1 cup chopped fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 eggs
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups marinara sauce

Instructions

  1. Preheat oven to 375°F (190°C). Cook pasta shells according to package instructions, drain and set aside.
  2. In a mixing bowl, combine ricotta, chopped spinach, Parmesan, eggs, garlic, Italian seasoning, salt, and pepper.
  3. Stuff each shell with the ricotta mixture and place in a baking dish.
  4. Pour marinara sauce over the stuffed shells and top with shredded mozzarella.
  5. Bake uncovered for 25-30 minutes until bubbly and golden.
