- 20 large jumbo pasta shells
- 2 cups ricotta cheese
- 1 cup chopped fresh spinach
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 2 eggs
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 cups marinara sauce
Instructions
- Preheat oven to 375°F (190°C). Cook pasta shells according to package instructions, drain and set aside.
- In a mixing bowl, combine ricotta, chopped spinach, Parmesan, eggs, garlic, Italian seasoning, salt, and pepper.
- Stuff each shell with the ricotta mixture and place in a baking dish.
- Pour marinara sauce over the stuffed shells and top with shredded mozzarella.
- Bake uncovered for 25-30 minutes until bubbly and golden.
Notes
You can add cooked ground meat or substitute with vegan cheese to customize this dish. For a vegetarian option, skip the meat and use plant-based cheese.
