- 2 lbs beef stew meat, cut into chunks
- 4 carrots, sliced
- 4 potatoes, diced
- 3 celery stalks, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tsp thyme
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Place all ingredients into the slow cooker.
- Stir to combine and season with salt and pepper.
- Cook on low for 8 hours or high for 4 hours until beef and vegetables are tender.
- Adjust seasoning if necessary and serve hot.
Notes
- You can substitute ground beef for stew meat for a quicker version.
- Add peas or green beans in the last 30 minutes for extra veggies.
