- 4 large bell peppers, halved and seeded
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 cup cooked rice
- 1/2 cup diced tomatoes
- 1 cup shredded cheese (cheddar or Mexican blend)
- 2 tbsp olive oil
- Fresh cilantro for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds.
- Heat olive oil in a skillet over medium heat, cook ground meat until browned.
- Add taco seasoning, diced tomatoes, and cooked rice; stir well.
- Stuff the mixture into the prepared peppers, top with shredded cheese.
- Place peppers in a baking dish and bake for 20-25 minutes until cheese is melted and peppers are tender.
- Garnish with fresh cilantro and serve hot.
Notes
- You can substitute ground chicken or vegetarian meat crumbles for a different flavor.
- For extra spice, add chopped jalapeños to the filling.
