These taco stuffed peppers are a delicious and colorful twist on traditional tacos, perfect for a quick weeknight dinner or entertaining guests.

  • 4 large bell peppers, halved and seeded
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup cooked rice
  • 1/2 cup diced tomatoes
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 2 tbsp olive oil
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds.
  3. Heat olive oil in a skillet over medium heat, cook ground meat until browned.
  4. Add taco seasoning, diced tomatoes, and cooked rice; stir well.
  5. Stuff the mixture into the prepared peppers, top with shredded cheese.
  6. Place peppers in a baking dish and bake for 20-25 minutes until cheese is melted and peppers are tender.
  7. Garnish with fresh cilantro and serve hot.
