- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups canned crushed tomatoes
- 4 cups vegetable broth
- 1 package (9 oz) tortellini (cheese or spinach filling)
- Salt and pepper to taste
- Fresh basil leaves, chopped
- 2/3 cup grated Parmesan cheese
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent, about 3-4 minutes.
- Stir in minced garlic and cook for 1 minute more.
- Add crushed tomatoes and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 10 minutes to develop flavors.
- Add tortellini and cook according to package instructions until tender, about 3-5 minutes.
- Season with salt and pepper to taste.
- Serve warm, topped with fresh basil and grated Parmesan cheese.
Notes
- You can use frozen tortellini for convenience.
- For a spicier kick, add red pepper flakes during cooking.
- Enjoy with crusty bread on the side!
