Soft and fluffy pancake pockets filled with sweet syrup, shaped into bite-sized treats that are crispy on the outside and tender inside.

Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • Cooked bacon pieces (optional)
  • Syrup for filling

Instructions

  1. In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk together buttermilk, egg, and melted butter.
  3. Pour wet ingredients into dry ingredients and stir until just combined.
  4. Heat a non-stick skillet over medium heat and spoon batter to form small pancakes.
  5. Cook until bubbles form and edges are golden, then flip and cook other side.
  6. Allow pancakes to cool slightly, then cut into small squares.
  7. Fill with syrup and bacon bits if desired, then shape into small bites.
  8. Serve warm with additional syrup.
