Instructions
- In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together buttermilk, egg, and melted butter.
- Pour wet ingredients into dry ingredients and stir until just combined.
- Heat a non-stick skillet over medium heat and spoon batter to form small pancakes.
- Cook until bubbles form and edges are golden, then flip and cook other side.
- Allow pancakes to cool slightly, then cut into small squares.
- Fill with syrup and bacon bits if desired, then shape into small bites.
- Serve warm with additional syrup.
