- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts or thighs, sliced
- 4 cups chicken broth
- 1 lemon, sliced and juiced
- 2 tablespoons capers
- 3 cloves garlic, minced
- 1 small onion, diced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add chicken slices and cook until browned. Remove and set aside.
- In the same pot, sauté onion and garlic until fragrant and translucent.
- Add chicken broth, lemon juice, lemon slices, and capers. Bring to a simmer.
- Return chicken to the pot, season with salt and pepper, and cook until chicken is fully cooked through, about 10 minutes.
- Garnish with fresh parsley and serve hot.
Notes
- For extra flavor, add a splash of white wine while sautéing onions.
- You can substitute chicken with turkey or shrimp for variation.
