- 8 oz spiral pasta
- 2 cups cooked grilled chicken, sliced
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup black olives, sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions, drain and let cool.
- In a large bowl, combine cooked pasta, sliced chicken, cherry tomatoes, cucumber, olives, and feta.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
- Pour dressing over the salad and toss gently to combine.
- Garnish with chopped parsley and serve immediately or chilled.
Notes
- You can substitute grilled chicken with roasted or sautéed chicken.
- Add bell peppers or red onions for more flavor and color.
- This salad is best served fresh but can be refrigerated for up to 2 days.
