- 2 large apples, peeled and diced

- 1 tablespoon lemon juice
- 1 pack refrigerated pie crusts
- 1 egg, beaten (for brushing)
- Turbinado sugar (for sprinkling)
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix diced apples with sugar, cinnamon, nutmeg, and lemon juice.
- Cut pie crusts into circles slightly larger than muffin cups.
- Press crusts into muffin tin cavities.
- Spoon apple filling into each crust.
- Fold edges over or leave open, brushing with beaten egg.
- Sprinkle with turbinado sugar on top.
- Bake for 20-25 minutes until golden brown.
- Allow to cool slightly before serving.
Notes
- Use tart apples like Granny Smith for best flavor.
- You can freeze unbaked mini pies for later baking.
- Serve with vanilla ice cream or whipped cream.
