Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 cup unsalted butter, chilled and cubed
  • 4-5 tablespoons ice water
  • 5-6 large apples (Granny Smith or Honeycrisp)
  • 3/4 cup sugar
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice

Instructions

  1. Mix flour, salt, and sugar in a large bowl. Cut in butter until mixture resembles coarse crumbs. Add ice water one tablespoon at a time until dough forms. Divide into two disks, chill for 30 minutes.
  2. Peel, core, and slice apples. Toss with lemon juice, sugar, cinnamon, and nutmeg.
  3. Preheat oven to 425°F (220°C). Roll one dough disk into a circle and fit into a pie dish. Fill with apple mixture.
  4. Roll out second dough disk and place over filling. Trim edges and crimp to seal. Cut slits if using a top crust.
  5. Bake for 45-50 minutes, until golden brown. Cool before serving.
