- 4 boneless, skinless chicken breasts
- 8 slices of bacon
- 1 cup shredded cheddar cheese
- 1/2 cup barbecue sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Preheat grill to medium-high heat.
- Season chicken breasts with salt and pepper.
- Cook bacon until crispy, then set aside.
- Grill chicken for 6-7 minutes per side until cooked through.
- In the last minutes of cooking, brush chicken with barbecue sauce.
- Top chicken with cheddar cheese and cover to melt.
- Crumble bacon over the cheesy chicken and garnish with green onions.
- Serve with roasted vegetables and crispy potatoes.
Notes
For extra flavor, add a pinch of smoked paprika or chili powder to the chicken. Can be made oven-baked by broiling at the end for cheese melting.
