- 1 lb chicken breasts, diced
- 1 cup orzo pasta
- 2 large onions, sliced
- 3 cups chicken broth
- 1 cup shredded Gruyere or Swiss cheese
- 2 tbsp olive oil
- 2 tbsp butter
- 2 cloves garlic, minced
- 1 tsp thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil and butter over medium heat. Add onions and cook until caramelized, about 20 minutes.
- In a baking dish, combine diced chicken, orzo, garlic, thyme, salt, and pepper. Pour in chicken broth and stir.
- Top with caramelized onions and shredded cheese.
- Bake uncovered for 25-30 minutes until bubbly and golden.
- Garnish with fresh parsley before serving.
Notes
- Use patient caramelized onions for the best flavor.
- Replace Gruyere with Swiss or a blend of cheeses.
- Can be assembled ahead and baked later.
