Ingredients
- For the meatballs: 1 pound ground beef, 1/2 cup bread crumbs, 1/4 cup grated Parmesan, 1 egg, 2 cloves garlic minced, 1 teaspoon dried thyme, salt and pepper to taste, 2 tablespoons olive oil, 1 cup beef broth, 1 tablespoon Worcestershire sauce
- For the mashed potatoes: 4 large potatoes, peeled and diced, 3 cloves garlic minced, 1/4 cup chopped fresh parsley, 1/4 cup butter, 1/2 cup milk, salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Mix ground beef, bread crumbs, Parmesan, egg, garlic, thyme, salt, and pepper in a bowl. Form into 1-inch meatballs.
- Heat olive oil in a skillet over medium heat. Brown meatballs on all sides, then transfer to a baking dish.
- Bake meatballs for 20 minutes. Meanwhile, simmer beef broth with Worcestershire sauce in the skillet used for browning to make gravy.
- Prepare mashed potatoes: boil potatoes until tender, drain, then mash with garlic, butter, milk, salt, and pepper. Stir in chopped parsley.
- Serve meatballs with gravy poured over and alongside the garlic herb mashed potatoes.

- You can add chopped onions or mushrooms to the gravy for extra flavor.
