- 2 large sweet potatoes
- 1/2 cup crumbled feta cheese
- 2 tablespoons honey
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C). Slice sweet potatoes into 1/4-inch rounds.
- Arrange rounds on a baking sheet lined with parchment paper. Drizzle with olive oil, and season with salt and pepper.
- Bake for 20-25 minutes until edges are crispy and golden.
- Remove from oven, top each round with feta cheese, and drizzle with honey.
- Return to oven for 5 minutes to slightly melt feta. Garnish with fresh herbs if desired and serve warm.

- Adjust honey quantity for sweetness preference.
- Can be prepared ahead and reheated briefly before serving.
