Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chopped fresh strawberries
  • 1/2 cup rolled oats
  • 1/4 cup packed brown sugar (for topping)
  • 1/4 cup all-purpose flour (for topping)
  • 1/4 cup unsalted butter, melted (for topping)

Instructions

  1. Preheat oven to 350°F (177°C). Line a baking sheet with parchment paper.
  2. Mix flour, baking soda, and salt in a bowl.
  3. Cream butter, granulated sugar, and brown sugar until fluffy. Add egg and vanilla, mix well.
  4. Gradually add dry ingredients to wet ingredients. Fold in chopped strawberries.
  5. In a small bowl, combine oats, brown sugar, flour, and melted butter to make crumb topping.
  6. Scoop dough onto baking sheet, leaving space between. Top each with crumb mixture.
  7. Bake for 12-15 minutes or until golden brown. Cool before serving.

Notes

  • Can use frozen strawberries, thawed and drained.
  • Store cookies in an airtight container for up to 3 days.
