- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup chopped fresh strawberries
- 1/2 cup rolled oats
- 1/4 cup packed brown sugar (for topping)
- 1/4 cup all-purpose flour (for topping)
- 1/4 cup unsalted butter, melted (for topping)
Instructions
- Preheat oven to 350°F (177°C). Line a baking sheet with parchment paper.
- Mix flour, baking soda, and salt in a bowl.
- Cream butter, granulated sugar, and brown sugar until fluffy. Add egg and vanilla, mix well.
- Gradually add dry ingredients to wet ingredients. Fold in chopped strawberries.
- In a small bowl, combine oats, brown sugar, flour, and melted butter to make crumb topping.
- Scoop dough onto baking sheet, leaving space between. Top each with crumb mixture.
- Bake for 12-15 minutes or until golden brown. Cool before serving.
Notes
- Can use frozen strawberries, thawed and drained.
- Store cookies in an airtight container for up to 3 days.
