Ingredients
Scale
- 1 baguette or Italian bread, sliced into ½-inch pieces
- 2 cups cherry tomatoes, halved
- 8 oz fresh burrata cheese
- 3 cloves garlic, minced
- Fresh basil leaves, chopped
- Extra virgin olive oil
- Balsamic glaze or vinegar (optional)
- Salt and freshly ground black pepper
- Red pepper flakes (optional for spice)
Instructions
- Preheat your oven to 400°F (200°C). Arrange bread slices on a baking sheet, brush with olive oil, and bake for about 5-7 minutes until golden and crispy.
- In a bowl, combine cherry tomatoes, minced garlic, chopped basil, a drizzle of olive oil, salt, and pepper. Toss gently and let marinate for a few minutes.
- Spread the tomato mixture generously over the toasted bread slices.
- Tear the burrata cheese into pieces and place on top of each bruschetta.
- Finish with a drizzle of olive oil and, if desired, a splash of balsamic glaze.
- Sprinkle red pepper flakes or extra basil for added flavor, if desired.
Notes
- Serve immediately for maximum crunchiness and freshness.
- Store leftover tomato topping in an airtight container in the refrigerator for up to 24 hours.
- Keep toasted bread separate to prevent sogginess; reassemble just before serving.
