Instructions

- Add dry ingredients gradually, mixing just until combined.
- Drop spoonfuls onto prepared sheets and bake for 12-15 minutes until golden.
- Cool completely before filling.
- Prepare filling by beating butter, vanilla, cinnamon, and icing sugar until smooth.
- Spread filling between two cookies to assemble the pies.
