- 1 lb ground beef or pork
- 1 small onion, finely chopped
- 1/2 cup bread crumbs
- 1 egg
- 1 tsp salt
- 1/2 tsp pepper
- 4 cups beef or vegetable broth
- 2 carrots, sliced
- 2 potatoes, diced
- 1 cup frozen peas
- 1/2 cup sour cream (optional)
- Fresh parsley, chopped for garnish
Instructions
- Mix ground meat, onion, bread crumbs, egg, salt, and pepper in a bowl.
- Form into small meatballs.
- Bring broth to a boil in a large pot, add carrots and potatoes, cook until tender.
- Add meatballs to the broth and simmer until cooked through, about 10 minutes.
- Stir in peas and sour cream if using, heat through.
- Garnish with chopped parsley and serve hot.
Notes
For extra flavor, add a splash of Worcestershire sauce or Dijon mustard to the meatball mixture. Use a mix of beef and pork for richer taste.
