- 2 pounds beef chuck, cut into chunks
- 3 carrots, sliced
- 2 potatoes, cubed
- 1 onion, chopped
- 3 garlic cloves, minced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Sear beef chunks until browned, then remove and set aside.
- In the same pot, sauté onions and garlic until fragrant.
- Add tomato paste, cook for another minute.
- Return beef to the pot, pour in beef broth, and add carrots, potatoes, thyme, rosemary, salt, and pepper.
- Bring to a boil, then reduce heat and simmer uncovered for 2 hours until tender.
- Adjust seasoning and serve steaming hot in rustic bowls.
Notes
- You can add mushrooms or peas for extra flavor.
- This stew is even better the next day after flavors meld.
