Ingredients

  • 2 pounds beef chuck, cut into chunks
  • 3 carrots, sliced
  • 2 potatoes, cubed

  • 3 garlic cloves, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sear beef chunks until browned, then remove and set aside.
  3. In the same pot, sauté onions and garlic until fragrant.
  4. Add tomato paste, cook for another minute.
  5. Return beef to the pot, pour in beef broth, and add carrots, potatoes, thyme, rosemary, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer uncovered for 2 hours until tender.
  7. Adjust seasoning and serve steaming hot in rustic bowls.
