- 1 pound large shrimp, peeled and deveined
- 1 bunch asparagus, trimmed
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 lemon, zested and juiced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Add the shrimp, season with salt and pepper, and cook until pink, about 2-3 minutes per side. Remove and set aside.
- In the same skillet, add the remaining olive oil and minced garlic. Sauté until fragrant, about 1 minute.
- Add the asparagus and cook until tender-crisp, about 3-4 minutes.
- Return the shrimp to the skillet, add lemon juice and zest, and toss to combine. Cook for an additional 1-2 minutes.
- Garnish with fresh parsley and serve immediately.
Notes
- Feel free to add a pinch of red pepper flakes for extra spice.
- Serve with crusty bread or over rice for a heartier meal.
